Wastewater flows into the top of the trap, down through a series of baffles which slow the flow, allowing the fats, oils, and grease to separate and rise to the top. The grease-free water then flows out into the sewer line.
To prevent the grease laden water from rushing through the trap without the grease separating from the water, smaller (usually interior) traps should be equipped with a flow control device. Too fast a flow can cause the trap to overflow.
